Rwanda Coko Cooperative – Nyamasheke

After a couple days of settling it developed a bright profile. Initial sips showed fruity and acidic flavors that were very upfront and in your face. After a few more days of settling this bean really surprised us as it developed a cream flavor that masked the acidity and blended with the bright fruit notes to have an overall flavor profile of berries and cream. From a pour over you really got the perspective of just how creamy and bright this bean was.

This bean rewarded a careful espresso! Meticulously crafting your shot, measuring, and precisely tamping would yield something… transcendant.
